Simple Egg Ramen for one

Dawn has asked for a recipe for my Egg Ramen. It’s very simple and perfectly easy to prepare.

What you need…

1 Package Beef Flavored Top Ramen noodles or similar.

1 1/2 cups water

1 Egg (Chicken)

1 Large Soup Cup or Soup Bowl (1o ounces or more)

Preparation time: 5 Min.

Break up the Ramen noodles inside the package before you open it. I usually break it into 4 pieces.

Open the package and remove the flavoring packet, pour the broken noodles into the soup cup.

Add the 1 1/2 cups of water to just cover the noodles and microwave on high for 3 min. If the noodles expand add water to keep just covered with water but usually 1.5 cups seems to work well.

Remove from the microwave, add about 1/2 the seasonings in the packet and stir well. see note 1

Break the egg into the cup and stir 3 or 4 times to break the yolk and slightly mix into the noodles.

Microwave for another 1-3 minutes until the mixture begins to boil. Remove the boiling mixture from the microwave and stir. The egg should finish cooking and thicken the remaining liquid.

The finished dish should be thicker than soup but not as stiff as oatmeal but then you can adjust the water to change it to what you prefer anyway.

I freshly crush some black pepper on top grab my favorite tablespoon and enjoy!

This is the perfect small meal for one person on the go for way under $2.00

Note:  Toss in a small handful of frozen stir fry vegetables to make this a pretty balanced meal for under $3.00.

Note1: You may add more of the flavoring packet for more flavor but since we are not making soup we do not need so much extra flavor and salt. I suggest even trying your own seasonings and throwing away that packet.

Asian flair (a splash or two of Soy sauce, 1/2 tsp. garlic, 3-4 drops of good sesame oil).
Southwest Flair (dash of Cumin, splash of chili sauce or powder, pinch of salt)
